Collards are very frost hardy and their flavor actually improves after a few freezes. Sow seeds outdoors from early spring to midsummer. Thin and weed young plants until they are established. Georgia Southern is slower to bolt than other collards and can tolerate summer heat.

The most flavorful leaves are harvested during cool seasons. Cut leaves from the bottom of the plant as needed.
