Start beets outdoors in loose, well-drained soil in early spring as soon as soil can be worked, or up to six weeks before fall frost. Beets prefer a cool climate and can tolerate mild frost. Plant seed every few weeks for continuous harvest.
Roots can be harvested when they reach 2 inches for tender baby beets and greens, or continue growing until the roots reach no more than 4 inches.
